Matsukasa
The Sepia spp. cuttlefish is a cephalopod also called needle cuttlefish.
It differs from the other cephalopods by its 10 tentacles, of which 2 are bigger than the others. It has a cylindrical ovoid body with 2 lateral fins, and a “bone” made of white limestone; its colors can vary so that it is able to hide.
It is caught throughout the year in the Pacific ocean (FAO zone 61 or 71), using trawls.
The absence of any chemical treatment allows its gustative qualities to be fully expressed.
We offer its white mantle that has been incised. This product is called Matsukasa.
It can be appreciated in Asian salads or wok-fried.
